Our number one goal is to have fun in the kitchen! We offer a variety of topics and strive to cover techniques and skills that appeal to both novice and more experiences cooks. Recipes are easy to follow, rely on easy-to-find ingredients, and, if possible, include make-ahead tips and tricks. Oct. 24 (Tues. eve.), 2017 Let’s Get Cooking with PUMPKIN! It's not just for pies, and it’s best from the pumpkin patch!  Fall is finally here and it’s time to celebrate all things pumpkin. However, you’ll discover that not all pumpkins are equal—some are best for decoration, there’s a variety that produces hulless seeds, and there are specialty pumpkins that yield bright orange pureé packed with flavor and nutrition.You’ll learn how to prepare real pumpkin pureé and use it in a wealth of ways including Glazed Pumpkin-Pecan Cake Doughnuts (baked not fried) that are so good that it’s hard to stop with just one. The West’s will make a Pumpkin Pie Cake (topped with whipped cream, of course), perfect for dessert, snacking or with coffee. On a savory note there’s Almost No-Knead Crusty Pumpkin Bread that pairs deliciously with Creamy Southwestern Pumpkin Soup for a lunchtime treat. And, believe it or not—Pumpkin Caramels that are oh-so-delicious for fall and winter holidays! Nov. 5 (Sunday), 2017 - Old-Fashion Peppernut Cookies - A Yuletide Tradition! Peppernuts, Pfeffernüsse,  Pepernoten Pebernødder – whatever you choose to call these tiny little spice cookies, one thing is for sure, they’re incredibly delicious! Brought to Kansas in the 1870’s by Russian Mennonites, these yummy “bites” of goodness range in size from ¼-inch to nickel-sized and are somewhat time consuming to make….. but, the final product is always worth the effort.  Traditionally enjoyed during the holiday season, making peppernut cookies (pronounced “pay-pa-nuts”) was a treasured way to gather family and friends in the kitchen to help roll, snip and bake these tiny cookies……and that’s just exactly what we’ll do during this morning’s baking class.  Experienced cooking duo, Barry & Meta West, will teach you how to prepare several varieties of this interesting dough, ranging from plain to fancy, then you’ll tie on an apron and help prepare some traditional recipes like Grandma Kohler’s Peppernuts, Russian Peppernuts, and other variations that feature molasses and nuts. Next, you’ll work in groups and mix and shape yet another simple batch of peppernut dough that you’ll divide up and take with you to bake off at home. We’ll end our class by sampling a variety of our baked cookies while Meta shares just a bit of history of peppernuts based on the research she did for a story that will appear in the fall issue of KANSAS! Magazine. Who knows? You just might be inspired to start a new holiday tradition of your own! First 5 pics show students at work and final photo shows just one of the braided sandwich breads made in class We also made Wheat Berry Bread which we sampled along with speciality oils and vinegars from The Tasteful Olive in Overland Part. Each participant also took home a loaf of bread that he/she had prepared. Fun group!

. . . the child care providers go through the process of making simple and nutritious foods that children could make in their day care centers.
Finishing up mini English muffin pizzas at the pizza station. 
Deli meats, low-fat cheese slices, whole wheat bread, lettuce & low-fat mayo are all rolled up in healthy & fun-to-make sandwich roll-ups. 
Chopped apples + a sprinkling of cinnamon-sugar top a canned biscuit for a slightly sweet treat -- suitable for a snack or for dessert. 
100% juice & low-fat yogurt are shaken together for a fruit juice shake up.
Reduced-fat spreadable cream cheese is spread on a reduced fat cracker (use one that's sturdy) and is topped with strawberry slices.
